...The gradual harvesting and a traditional, not intrusive vinification creates this version, which is aimed at expressing Pecorino's fundamental characteristics, exalting, without exaggerating, the fresh and not banal aromatic complexity and the peculiar tasting profile, where alcohol, acidity and minerality are present in a very good balance.

Organoleptic propertiesCOLOUR: Straw yellow with light shades of gold. AROMA: Fine and elegant nose, of pear, broom and gardenia, rounded off by hints of honey, but vibrant with the typical herbal flavours of the variety (sage, rosemary, lavender). FLAVOUR: Dense introduction to a full body mouth. Smoothly and here the zesty acidity and minerality move up the tasting balance giving a long, mouth-watering persistence. |
