.... Here in Italy, “avere grilli per la testa” (literally “to have crickets in one’s head”) means to have strange, creative, funny ideas in mind. But “Bianchi Grilli” are some “white crickets” that we are definitely not able to get out of our head.

Organoleptic propertiesCOLOUR: Straw-gold yellow AROMA: dthe maturation on good fermentation lees exalts the balsamic and officinal herb spiciness of the variety, which seems to lose the youthful aromatic character, and to gain, through its bottle life, a deeper, more complex and important tone, probably expressing more authentically the soul of the grape, which is still not well explored.. FLAVOUR: The naturally high acidity and minerality interacts with the typical roundness of barrel ageing without being tamed, on the contrary giving evidence of Pecorino's great potential. |
