Vinificationthe grapes, picked by hand, reach the winery where they are crushed and pumped into steel vats for about 24 hours in contact with the skins. Once they have been taken out of the vats and settled, primary fermentation begins and is thoroughly controlled. As a rule, and above all this year, second, malolactic, fermentation does not take place, in order to keep the aromas fresh and fruity. Once decanted, in order to separate the yeasts, it stands in steel containers in the cold until January. |
